The Katana Adelaide Hills Chardonnay

Riposte The Katana Adelaide Hills Chardonnay draws from Charlie's Patch Vineyard at Charleston in the Adelaide Hills. The vines are shoot thinned to allow more sunlight into the canopies.
The grapes are handpicked and chilled overnight, then whole bunch pressed. The juice is rough settled and transferred to French oak barrels, around one quarter new, for fermentation. The wine remains on lees in barrel until blending and bottling.
Pale straw, Riposte The Katana Adelaide Hills Chardonnay reveals white stone fruit flavours with subtle oak, crisp acidity and a mineral edge. Cellaring potential is three years.
